Lately I've been spending my days at home, resting. That means I have a lot of time to cook and try new recipes. This is a sweet, nourishing and very easy to make soup. Perfect for a cold day!
850g frozen peas
1 small courgette
1 clove of garlic
3 tbsp of olive oil
750ml of water
1 vegetable stock cube
50g of crème fraîche
A handful of mint leaves
Thinly slice the onion and the garlic. Heat the oil in a pan. Add the onion to the pan and fry at medium heat for 2-3 minutes or until the onion has softened. Add the garlic and crumble in the vegetable stock cube. Cook for another 2 minutes.
Cut the courgette into pieces. Add the peas, courgette, water, mint leaves and half a teaspoon of salt to the pan. Bring to boil, then reduce heat and pop a lid on the pan. Simmer for 20-25 minutes.
Remove the pan from the heat and let it cool a bit. Add the crème fraîche and some black pepper and blend together. If the soup is too thick, add a little more water. Taste and adjust seasoning if necessary.
